Waffles are an essential Norwegian tradition. Not a week goes by in a Norwegian home without a waffle being eaten. Unlike the Belgium waffles, Norwegian waffles are large, soft and fluffy and fit pefectly folded in your hand.
INGREDIENTS (MAKES 5 LARGE WAFFLES/PANCAKES)
4 dl soy milk (or other non-dairy milk)
1 tbsp. apple cider vinegar
0.75 dl sunflower oil or other neutral oil
1/2 dl sugar
1.5 tsp. baking soda
1/2 tsp. cardamom
Pinch of salt
3 dl all-purpose flour
Whip soy milk and oil together in a bowl, and leave to rest for 5 minutes until it thickens slightly.
Mix in the rest of the ingredients. Leave to rest for minimum 5 minutes. You can also leave it in the fridge overnight.
Fry away. Tip: put some oil or margarine in the iron to avoid sticking.
Serve hot with jam or sugar - tuck in and nyt (enjoy!)
