Looking for a swap for the usual tuna sweetcorn? Try this 5 minute lunch filling, perfect for sandwiches, wraps, or a side salad!

Serves [4]

Ingredients

  • 1 tin of chickpeas

  • 1 small tin sweetcorn

  • 1/2 red onion

  • 4 tablespoons mayonnaise or vegan mayo (Hellmans, vegannaise)

  • 1 teaspoon mustard

  • 1 tablespoon chopped up capers/pickles/olives/gherkins for tanginess

  • pinch of salt and pepper

Method

  1. Drain and rinse the chickpeas into a bowl

  2. Mash the chickpeas roughly with a fork

  3. Drain and rinse the sweetcorn and add in

  4. Mix in all the other ingredients!

  5. Chill in the fridge
