Pangrattato (Garlic and Rosemary Breadcrumbs)

Crispy, crunchy breadcrumbs flavoured with rosemary and garlic. A delicious way to use up leftover bread and perfect to sprinkle over your finished pasta dish. Some call it poor man's Parmesan', as it’s a thrifty alternative, but it doesn’t taste second best.

Ingredients

  • 3 or 4 slices of stale bread 

  • olive oil 

  • 2 garlic cloves, peeled and finely chopped 

  • pinch of dried chilli flakes (optional) 

  • 1 lemon, zested (optional) 

  • a sprig of rosemary, chopped or a pinch of dried rosemary (optional) 

  • salt and pepper 

Method

  1. Blitz the bread, rosemary and garlic in a food processor to coarse crumbs. 

  2. Warm 2 tablespoons of oil in a frying pan, add the, bread, garlic and rosemary and stir. 

  3. Fry over a medium heat for 4-5 minutes, until golden and crisp. 

  4. Remove from the heat. Stir in chilli flakes, lemon zest and salt and pepper to taste. 

  5. Serve over pasta, mac ‘n’ cheese or even a fried egg to add flavour and texture.
