Mediterranean cod

This is a fresh, light dish that turns simple ingredients into something vibrant and satisfying, straight from the coast of the Mediterranean Sea. Quick to cook and full of flavour, it’s perfect for an easy weeknight meal that feels a bit special but still fits a low‑waste.

Ingredients

  • 1 portion of prepared tomato sauce

  • Handful of chopped roasted peppers (from a jar)

  • Handful of black olives

  • ¼ cup of water

  • 4 cod or haddock fillets

Method

1. Gently heat the prepared tomato sauce in a wide pan over a low heat.

2. Add the chopped peppers, olives and water and stir.

3. Carefully arrange your fish in the pan, pushing it into the sauce.

4. Put a lid on the pan and cook gently for approximately 10 minutes.
