This is a lighter twist on a beef classic, using simple, affordable ingredients to create a comforting sauce that’s perfect for busy weeknights. Use up spare veg from the fridge — just chop in what you’ve got. Turkey mince keeps it budget‑friendly without losing any of the rich, cosy flavour you want from a bolognese. Ideal for batch‑cooking and freezing, it’s a staple you’ll come back to again and again.

Ingredients

  • 500g turkey mince

  • ½ tsp dried thyme or oregano

  • 1 tbsp oil

  • 1 onion

  • 2 garlic cloves

  • 1 carrot

  • 1 stick of celery

  • 2 tins of chopped tomatoes

Method

1. Finely chop the garlic, onion, celery and carrot.

2. Heat the oil in a pan and add the chopped vegetables and thyme. Cook slowly for 10 minutes.

3. Add the turkey and cook until white, breaking it up with your spoon.

4. Add the chopped tomatoes, bring to the boil and simmer for 20-30 minutes.

5. Season and serve with your favourite pasta
