This cake is wonderfully moist and simple to make. Whole oranges add lovely citrus flavour, while ground almonds create a soft, tender crumb that stays moist for days. It’s only a handful of ingredients but this recipe delivers big on flavour. Enjoy!

Ingredients

  • 2 ½ oranges

  • 5 eggs

  • 215g ground almonds

  • 215g caster sugar

  • 2 tsp baking powder

  • 1 tsp cinnamon

  • 1 tsp ginger

Method

1. Cut your oranges into 8 slices.

2. Put a large pan of water on to boil then add your oranges. Boil for approximately 30 minutes or until they are soft.

3. Preheat the oven to 160°C.

4. Remove the oranges from the water and blend until smooth.

5. Put the eggs in a bowl and whisk.

6. Add all of the other ingredients, including the orange pulp and mix well.

7. Line a deep cake tin or roasting tin.

8. Pour the mix into the tin and cook for approximately 20 minutes.
