Southern style chicken

If you're craving all the comfort of classic Southern fried chicken but want a simpler, lighter way to enjoy it at home, this recipe is the perfect choice. It’s an easy, comforting dish that delivers big flavour with minimal fuss.

Ingredients

  • 12 boneless chicken thighs

  • Sunflower oil spray

For the marinade:

  • 200ml buttermilk or whole milk

  • ½ tsp pepper

  • 1 tsp

  • sea salt

  • ½ tsp dried thyme

For the coating:

  • 100g plain flour

  • 1 tsp paprika

  • 1 tsp sea salt

  • 1 tsp black pepper

  • 1 tsp dried thyme

Method

  1. For the marinade put all of the ingredients in a bowl and add the chicken. Cover and refrigerate overnight or for at least 5 hours.

  2. Preheat the oven to 220°C and line two trays with baking paper.

  3. For the crispy coating, put all the ingredients in a bowl. Dip the chicken into the mix then turn to coat well on all sides.

  4. Spray each piece a few times with the oil.

  5. Cook for approximately 25 minutes.

  6. . Serve immediately!
