Southern style chicken

Ingredients
12 boneless chicken thighs
Sunflower oil spray
For the marinade:
200ml buttermilk or whole milk
½ tsp pepper
1 tsp
sea salt
½ tsp dried thyme
For the coating:
100g plain flour
1 tsp paprika
1 tsp sea salt
1 tsp black pepper
1 tsp dried thyme
Method
For the marinade put all of the ingredients in a bowl and add the chicken. Cover and refrigerate overnight or for at least 5 hours.
Preheat the oven to 220°C and line two trays with baking paper.
For the crispy coating, put all the ingredients in a bowl. Dip the chicken into the mix then turn to coat well on all sides.
Spray each piece a few times with the oil.
Cook for approximately 25 minutes.
