Chilli Turkey stir fry

A speedy, flavour-packed stir‑fry that turns simple ingredients into a vibrant weeknight dinner. Fresh, spicy and ready in minutes, it’s easy to adapt to your tastes and you can throw in whatever veg you already have.

Ingredients

  • A splash of oil

  • 500g turkey, sliced

  • 1 carrot, sliced

  • 200g broccoli

  • 1 garlic clove, chopped

  • 2cm piece fresh ginger, chopped

  • ½ chopped red chilli

  • 40g sweet chilli sauce

  • 1tbsp soy sauce

  • Spring onions, sliced

  • Fresh coriander

  • Lime wedges, to serve

Method

  1. Heat a splash of oil in a large frying pan or wok over a high heat. Add the turkey and cook, stirring for 4-5mins until beginning to brown.

  2. Add the carrot and broccoli to and cook for 3 minutes more.

  3. Stir in the chopped garlic, fresh ginger and red chilli, then cook for a minute more. Add the sweet chilli sauce and soy sauce and fry for 4 minutes until the turkey is starting to brown and crisp.

  4. Scatter with sliced spring onions and fresh coriander.

To serve

  • Serve with lime wedge and egg noodles.
