Breakfast burritos
A hearty breakfast burrito gets your day off to a good start. With savoury eggs, fresh veggies and a little melted cheese wrapped in a warm tortilla, it’s a wholesome, healthy option you can make in minutes – it’s just as good eaten straight away as it is wrapped up for later.

Ingredients
2 eggs
2 tbsp milk
1 tomato – finely chopped
2 mushrooms – finely chopped
1 spring onion
1 tsp butter
1 wholemeal tortilla wrap
40g hard cheddar – grated
Method
Beat the eggs and the milk together in a bowl with some salt and pepper
Add the chopped mushrooms, tomato and spring onions.
Melt the butter in a frying pan (the same size as the frying pan) then add the egg mixture.
Cook for a few minutes, gently pulling the egg on the outside into the middle using a fork. When the egg is nearly cooked sprinkle with the grated cheese.
Lay the tortilla on top of the egg then gently turn both out onto a board.
Roll up the tortilla like a Swiss roll.
Eat immediately or wrap in foil for later!
